Sharpham, Bacchus Stop Ferment



Bacchus juice is fermented in stainless steel tanks and is tasted every day through the fermentation to check balance. They stop the ferment by cooling the tank to -5C, leaving some residual sugar before being sterile filtered. This is off-dry and aromatic. Tropical fruits and floral notes make up this pronounced aroma profile. The upfront sweetness of this wine is perfectly balanced with a backbone of acidity. Great to pair with aromatic, lightly spiced Asian dishes such as Thai curry and great with soft blue cheese.
