Tipped as Puligny-Montrachet’s ‘domaine to watch’ in 1988’s The White Wines Of Burgundy by Burgundy expert Jasper Morris, hell-raising vigneron Hubert Chavy never delivered on his early promise. Hubert passed away in 2015 and since 2008 his son, Romaric Chavy, has been in charge of the estate, wasting no time in staking a claim as one of Burgundy’s next wine-making stars. On the plain at Puligny-Montrachet, these 60-year-old old vines grow on deep soil with lots of clay, producing golden, concentrated grapes. The wine spends 10 months in barrels and vats. Opulent, lively, and exotic, this Aligoté offers a light interpretation of citrus and yellow-fleshed fruit.
