Tasting Notes: Beautiful pale rose petal red. Bright crunchy red berries on the nose, cranberry, spice and smoke. The palate is mineral, fresh and salty. Lots of red fruit skin, firm cherry, raspberry, wild strawberry and red citrus. Balanced with a little spice, crisp acidity and juicy. Saline, fresh and very super dry finish.
Winemaking: 10-40 year old vines at a max of 90m above sea level farmed with no irrigation. Humidity makes it hard to farm organically. Hand harvested. 4 hours maceration on skins. Fermentation with wild yeasts in SST for 20 days. Undergoes malolactic fermentation. Cold stabilised and filtered. Less than 10 mg/l of sulphur added.
