Tasting Notes: Short, gentle maceration captures the energy and elegance of Pinot Noir and tanginess of the volcanic soil it grew on. Generously spicy yet succulent, this is a rosé made for ageing, calling for a bigger glass.
Winemaking: Manual harvest in 20kg crates, first week of October 2020 Destemmed and crushed, 24 hours of skin-maceration. Spontaneous fermentation, racked and rested on lees for 16 months in stainless steel tank. Unfined, unfiltered with the addition of 30 ppm sulphur at bottling.
