Tasting Notes: Herbs, yellow fruit and smoke. Enticingly aromatic skin-contact white with superb acidity and salty finish. Almost too easy to drink.
Winemaking: Manual harvest in 20kg crates, second week of September 2021. Destemmed and crushed, 3 days of skin-maceration. Spontaneous fermentation, racked and rested on fine lees for 7 months in stainless steel tank with 3 batonnages.
