Winemaking: This is a Pet Nat (Pétillant Naturel or Méthode Ancestrale) bottled before it's finished its fermentation and is unfiltered. It was partially disgorged and has zero doasage (no added sugar). It doesn't go through malolactic conversion and has no added sulphites. Basically it's a unique Cornish sparkling wine made with minimal intervention from red grapes showcasing the vintage in all its glory. It also has a cork instead of a crown cap.
Tasting Notes: It has a light mousse with aromas and flavours of sour cherry, raspberries and vanilla.
