Winemaking: Polgoon make delicate, clean wines and ciders from a sunny hill overlooking Mount's Bay in Penzance. Since their first vintage in 2006, their wines have become known for their precision and expressiveness, winning many awards.
This special edition Sauvignon Blanc is the first wild ferment created at Polgoon, made without added yeasts and allowing the vineyard’s own natural yeasts to shape the wine’s identity. The result is a pure expression of Cornish terroir - layered, distinctive and full of character.
Tasting Notes: This has aromas of citrus, green apple and subtle herbal notes. On the palate it's vibrant and mineral-driven with a burst of citrus and crisp green apple. A stony backbone and natural freshness give the wine both elegance and energy, leading to a clean, lingering finish.
Food Pairing: Pairs wonderfully with fresh seafood, light salads, and soft goat’s cheese. Ideal for those who enjoy crisp, expressive wines with Cornish character.
