Tasting Notes: A layered, aromatic nose, which has a slight herb and hay character, but the major focus is orange and tangy orchard fruit. Lemon peel. Complex. Definite lees-derived texture and flavour on the palate. Spicy and broad but no lack of orange-peel refreshment either. A little saline lick on the finish. A very well-assembled blend – convincing and totally enjoyable.
Winemaking: The fruit was pressed, settled and racked to aged French oak casks. Fermentation occurred spontaneously, with maturation lasting ten months, on fine lees. The wine was then blended and bottled, sans fining.
