Tasting Notes: Pale lemon green in colour with a lively mousse that quickly settles to a steady stream of fine bubbles. Aromas are a combination of apples, citrus and freshly baked bread. On the palate, this wine shows great vivacity, complexity and a fine mousse.
Winemaking: With secondary fermentation taking place in bottle, the wine was then aged in bottle for a minimum of 5 years, after which the bottles were disgorged and aged for a further 6 months on cork. A small part of the overall blend was both fermented and aged in oak to further the complexity and mouthfeel produced by a such a long period on its lees.
