Winery: Jorge Olivera decided to leave his job as a mechanical engineer to be able to dedicate as much time as possible to what in recent years had been his hobby. Take care of the vineyards and make wines without any chemical additives.

Completely self-taught, he settled in his mother's hometown, Coscojuela de Sobrarbe, where he has a small semi-underground cellar to be able to have good humidity and temperature conditions in the aging of the wines. There he works 7 hectares of vineyards organically and biodynamically. 

The grape varieties he grows are Moristel, Parraleta, Garnacha, Macabeo, Garnacha Blanca, Syrah and Chardonnay. Jorge ages most of his wines for 10-12 months in barrel, although he also makes some wine in stainless steel.

Tasting Notes: Tangy, fresh, floral and crunchy - this wine is all about the red fruit. Rhubarb compote, strawberry jam and summer strawberries. 

Food pairing: The wine pairs well with roast chicken and fleshy white fish.
