Tasting Notes: Refreshing and zingy flavours of melon, greengage and citrus zest, with a saline backbone thanks to a coastal influence in the vineyard.
Winemaking: Winemaking - Mechanical harvest. Grapes are fermented on indigenous yeasts in stainless steel. The juice is aged on fine lees for 3 months before settling. The wine is lightly filtered without the use of any fining. The juice is bottled with a minimal amount of sulphite (about 35 mg/litre total).
