Tasting Notes: A bouquet of ripe orchard fruits. In the mouth the wine offers notes of peach, cantaloupe melon and honey, supported by a textural, medium-bodied palate and refreshing acidity.
Winemaking: Following a gentle crushing and pressing in a pneumatic press, the juice is cold settled and cool fermented with a combination of wild and inoculated yeasts below 15C to maximise the production of fruity esters. Post fermentation the wine is matured on its fine lees at a stable temperature in steel tanks, prior to filtration and bottling in mid-spring.
