Tasting Notes: Deep cherry red, with a complex nose with notes of red fruits, currants and wild berries, spicy. Aging in barrel leaves some spicy notes with floral flavours in the background. Mineral in the mouth, long and elegant finish.
Winemaking: Manual harvest in 12 Kg cases. Criomaceration for 7 days at 5ºC prior alcoholic fermentation in small concrete vats of 40 hl, followed by a malolactic fermentation in French oak barrels. In Spain, a vino de pago is a wine that comes from a specific vineyard that has obtained the highest category of recognition due to the uniqueness of its terroir, considering factors such as soil, climate and altitude.
Since 2009, Otazu has stood out as one of only 23 wineries in Spain to have
achieved this prestigious recognition. This allows them to produce wines under their
own Protected Designation of Origin, known as Pago de Otazu PDO.
