Vineyard: The vineyard is located in the village of Harsovo, covering 10 hectares with predominantly southern exposure. The vines are 50-60 years old, with deep root systems that extract essential minerals and microelements, contributing to the wine’s structure and terroir expression. The harvest takes place at the end of October.
Winemaking: Alcoholic fermentation starts after a two-day cold maceration. The process is carried out at lower temperatures than are typical for red wine fermentation and using isolated and selected yeasts from their own vineyards. Once this stage is complete, the wine is separated from the solid parts and undergoes malolactic fermentation. 50% of the quantity is aged in old oak barrels for 1 year.
