Tasting Notes: Red fruits, cherries, flowers and spice aromas. Fruity, fresh and fine mouthfeel, standing out from a long, mineral and spicy hint.
Winemaking: Harvested by hand in 15kg boxes. Whole grape bunches fermented spontaneously with indigenous yeasts in a stainless steel vessel. During fermentation the must was manually turned up every day. Pressed by hand in a basket press and transferred into a stainless steel vessel for malolactic fermentation. Aged for 5 months in old French oak barrels. Bottled unfiltered, clarified by natural decantation. Without additives, except a minimum dosage of sulphur dioxide.
