Viña Edén, ‘3D’ Undisgorged Sur Lees NV

This is Viña Edén’s competition to rival top-quality sparkling wines from across the globe. It is Brut Nature which means no sugar is added and this is an extra-dry sparkling wine made in the traditional method and showcases the cool-climate of Maldonado, Uruguay, where the grapes are grown.

This is the same wine as the Viña Edén Brut Nature, but not disgorged off its yeast. It has a crown cap (like a beer bottle) then covered with wax to protect the seal. Once opened, in the glass, it’s a cloudy lemon yellow colour. It has a chalky, lemon nose with aromas of white flowers and sherbert. On the palate, there is tons of fruit – Asian pear, violet, apple whilst savoury and subtle spices. It has an incredible vivacity – mineral brightness but also tons of mouth-filling fruit. Unique and incredible. But be careful when you open it, as it has lots of gas!
