Widely considered to be one of the best producers in Slovenia, Edi Simčič’s wines are truly unique, stoically traditional and proudly Slovenian. Three generations are still at work here, passing knowledge and experience from father to son every day. Edi himself is still very much a key character at the centre of the business, with his son Aleks working alongside him. Fantastically ripened grapes result in the relatively intense aroma for Simčič’s Rebula. Offering dried apples, lemon and lime, with a nice balsamic and honeyed touch. Aged in large barriques, the oak is subtle and provides a little smokiness as well as ageability. Dry and fresh on the palate, with notes of white blossom rather than fruit, and richly textured. Great tension and a little saline, makes this a wonderful match for sushi.
