Doniene Gorrondona, Bizkaiko Txakolina



Doniene (Basque for Saint JohnGorrondona Txakolina has 15 hectares of vineyard, owned and leased, in production. Its vineyards are located on the slopes of Bakio above the Bay of Biscay. They grow on estates with a variety of soils that are up to 250 metres above sea level. Doniene Gorrondona was one of three original pioneers in the revival of txakolina production near Bilbao, with the creation of the Bizkaiko Txakolina DO in 1994.

This white wine is 91% Hondarrabi Zuri, 5% Hondarrabi Zuri Zerratia, 3% Munemahatsa and 1% other varieties. Harvest was between 24 September and 16 October 2021. It was a manual harvest with grapes put into boxes. Grapes were selected in the winery and spent a maximum of three hours inside before being pressed.

Production: destemming and extraction of the grape juice by pneumatic pressing. Controlled fermentation at 18-20C with indigenous yeasts. The wine stayed with its lees until bottling. Wines from different vineyard plots were blended after ageing, which was in stainless steel tanks.

The wine is a pale yellow colour. On the nose, there are herbaceous aromas, and fruit (apple, white fruit). There’s a balanced fruitiness on the palate with some fennel on the finish.
