Cantina Cleto Chiarli, Sassomoro, Lambrusco di Modena NV, Castelvetro



The grapes for this Lambrusco are pneumatically pressed, very gently, and left to cold macerate for 48 hours at 10 – 12 degrees C. The juice is then racked off the skins and clarified before a slow fermentation at 18 degrees C in “cuves closes”. This sealed environment forces some of the carbon dioxide (a natural by product of the alcoholic fermentation) to become trapped in the wine, creating the lightly sparkling character. The grapes are sourced exclusively from vineyards within the Chiarli Family estates at Castelvetro. A deep red wine, with aromas of ripe strawberries, cranberries and raspberries and a delicate mousse.
