Bouchon, Extra Brut Pais/Cinsault



Julio Bouchon and his children carry on a family tradition of creating distinctive, terroir-driven wines including the celebrated País Salvaje (wild País) which is grown in a forest and requires hand harvesting on ladders some of which are 5 meters tall. Bouchon Extra Brut is made with grapes from unirrigated old vines in the coastal drylands of the Maule (País) and Itata (Cinsault) valleys in Chile. The first fermentation took place in stainless steel tanks at 17C and for 20 days and in small stainless steel tanks at 15C for 25 days.It has a nice pale pink colour with fine and persistent bubbles. It has aromas of pears, green apple and cherry. Drink with oysters and all kinds of seafood.
