Owned by Pepe Raventós and his business partner Francesc Escala, both of Raventós i Blanc, Can Sumoi saw its first harvest in 2016. At 600m above sea level, it is the highest integrated estate in Penedès and the altitude provides both good air flow, ensuring healthy grapes, and a cooler microclimate than the broader area, enabling them to harvest at a low pH (higher acidity). Farming is certified biodynamic. Pepe Raventós’ “clean and precise” style of winemaking includes manual harvests, the use of native yeasts and spontaneous fermentation, no additions of sulphur or additives, inert gas used to prevent oxidation, extreme temperature control and small-batch bottling. This Xarel·lo comes from vines which are an average of 40 years, grown on limestone soils. Pepe Raventós says he got the inspiration to make a single varietal Xarel.lo from late Loire Valley wine expert Didier Dagueneau.
